1 cup (200g) granulated sugar
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
½ cup (113g) unsalted butter, melted and slightly cooled
1 large egg
1 egg yolk
1 tbsp vanilla extract
½ tsp almond extract (optional but recommended)

½ cup Christmas jimmies (red + green)
½ cup granulated sugar (for rolling)
Directions
- Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
- Mix the dry ingredients. In a medium bowl, whisk together flour, baking powder, baking soda and salt.
- Mix the wet ingredients. In a separate bowl, whisk melted butter, granulated sugar, egg and egg yolk, vanilla and almond extract (if using).
- Combine. Pour the wet mixture into the dry mixture and stir until a thick, sticky dough forms. Fold in the Christmas jimmies. If dough feels too loose, add 1–2 tablespoons flour — it should feel sticky but scoopable.
- Roll in granulated sugar. Scoop about 2 tablespoons of dough, roll into balls, then roll each ball in granulated sugar to coat.
- Bake. Place dough balls on the baking sheet, leaving space to spread. Bake 10–12 minutes, or until edges look set, tops are lightly crackled and centers look slightly underdone. They will continue to firm up as they cool.
- Cool. Allow cookies to cool on the baking pan for 5 minutes before transferring to a wire rack. The centers stay soft, gooey, and buttery — perfect for a break-apart shot.

- These cookies are meant to be soft and gooey — avoid baking until firm.
- If using salted butter, reduce added salt to ¼ teaspoon.
